3 Must Try Chicken Wing Recipes For Your Next Party

Here at my house, we love to entertain guests during big sporting events. We look forward to the Superbowl, NBA and NHL Playoffs and the World Series, just so we can throw a party! One of the foods we like to make are chicken wings, because they are inexpensive and easy to prepare.

Each of these recipes can easily be doubled depending on the number of guests you will be feeding. You will want to plan on 5-6 wings per guest.

You can prepare them a day in advance and keep them refrigerated. Once you are ready to serve your party guests, just reheat them in a 350 degree oven for 10 minutes.

Here are 3 of our favorite recipes.

Zesty-Style

24 chicken wings
1/4 cup hot pepper sauce
1/2 cup butter, melted
3 Tbsp. vinegar
2 pkgs. Hidden Valley Ranch (tm) mix

Preheat oven to 350 degrees. Dip chicken in mixture of melted butter, pepper sauce and vinegar. Place in baking pan. Sprinkle with 1 package dry dressing mix. Bake 20 minutes. Turn wings and add 2nd package of dressing mix. Bake an additional 20-25 minutes or until brown.

Sensational Sweet and Sour

24 chicken wings
1 jar of orange preserves
1 bottle of Russian salad dressing
1 pkg. dry onion soup

Mix together orange preserves, salad dressing and onion soup mix. Pour over chicken and seal container for 2 hours to allow them to marinate in the refrigerator. Bake, covered, for 30 minutes, and uncovered for another 30 minutes.

Yummy Yogurt Baked

6 oz. plain yogurt
1 tsp. salt
2 tsp. Worcestershire sauce
1/2 tsp paprika
1/4 tsp. Tabasco sauce
1/4 tsp. garlic powder
24-28 chicken wings
1 cup dry bread crumbs

Heat oven to 350 degrees. Use a baking pan and grease it lightly. Mix yogurt, salt, Worcestershire sauce, paprika, Tabasco sauce and garlic powder together. Dip chicken in mixture, roll in dry bread crumbs. Place wings in the baking pan and bake uncovered for 60 minutes.

Vinegar Based Barbecue Sauce - We're Not in Kansas Anymore

Let's talk only about vinegar based barbecue sauce. How's that?

You might think that this really narrows down the choice of sauces. Yes and no. We have eliminated tomato based sauces, sure, but that still leaves us with everything east of the Mississippi river. Let's get out of Kansas City and head toward the east coast.

Lots of sauces have a combination of vinegar and tomato as a base. If we cut out everything but the vinegar, that takes us all the way to North Carolina (actually eastern North Carolina). This is the home of the vinegar based barbecue sauce. From there, BBQ sauce recipes have less vinegar and more additional ingredients the farther away you travel (all the way to back to Kansas City, where they use very little or no vinegar).

If we tried to create a map of the United States showing the location of all the styles of BBQ sauce, with all of the regional and local variations, it would look like a 1600s map of Indian tribes with all their associated bands. There would be hundreds of them (maybe more).

Down to the Basics

The most pure form of vinegar based barbecue sauce would be straight vinegar (preferably apple cider vinegar), with maybe a touch of salt and pepper. Quite often it is flavored with some red pepper flakes or a little cayenne pepper.

Unlike tomato based sauces, vinegar based BBQ recipes are used at all stages of the cooking process. Tomato based sauces have sugars that can burn. They are normally used as a finishing sauce and added during the last minutes of smoking. Usually those tomato sauces have a few more ingredients and are also thicker.

Vinegar is powerful stuff. It is acidic and will penetrate meat. It aids with tenderization and helps to allow the pork to be pulled apart (vinegar based barbecue sauce is most often used with pulled pork). Because of this characteristic, if the vinegar is flavored, it will also get flavor deep into the meat. By using it early and often during smoking, the flavors will intensify.

A Simple Sample Recipe

Here is a basic vinegar based BBQ sauce recipe. It can be used as a marinade (before smoking), a mop sauce (used during smoking), a finishing sauce (applied at the end of smoking), or a dipping sauce (at the table). This helps the meat stay moist, tenderizes it, and flavors it. It's no wonder people keep using it.

1 1/3 C cider vinegar

2/3 C water

1 Tbl salt

1 tsp chili powder

Something like this, or any other form of vinegar based barbecue sauce, should be made a day in advance, if possible. That gives the vinegar time to break down the seasonings and absorb them.

Remember that you control the flavors. Add your favorite spices, change the type of vinegar, use more or less water... it's entirely up to you. You can even add things like tomato sauce, ketchup or mustard. Just don't go overboard or you will end up back in Kansas City, with no vinegar, looking for a different article.

Whole Chicken Recipes - Easy & Quick To Prepare!

These whole chicken recipes are easy, quick and delicious. Just check these out and I'm sure you'll be amazingly surprised.

So put your hat on and get ready for some quick easy whole chicken recipes :

>> Whole Roasted Chicken Stuffed With Dirty Rice

3 pounds Deboned whole chicken

4 tablespoons Olive oil Emeril's Essence

1 pound Chicken gizzards

3 cups Water

2 tablespoons Flour

1 pound Ground pork

1 cup Chopped onions

1/2 cup Chopped bell peppers

1/2 cup Chopped celery

4 cups Cooked white rice

1/2 cup Chopped green onions

1/4 cup Chopped parsley Salt to taste

1 pinch Cayenne pepper Alligator Sauce Piquant

1 Long chives

1 tablespoon Chopped chives

In Sauce Piquant recipes which are included in this collection. Preheat the oven 400 degrees. Rub the entire chicken with 2 tablespoons
olive oil and season with Emeril's Essence. In a saucepan, boil the gizzards, covered with water for about 1 hour or until they are tender. Drain the gizzards and reserve the liquid. In a food processor, finely chop the gizzards. In a large saucepan, combine 2 tablespoons of the oil and the flour over the heat. Cook the mixture for 8 to 10 minutes, for a dark roux, stirring constantly.

Add the pork to the roux and cook for 5 to 6 minutes, stirring constantly. Add the onions, bell peppers, and celery and cook for about 5 to 6 minutes, or until the vegetables are wilted. Add the chopped gizzards. Pour the remaining liquid into a 1-cup measuring cup. Make up the difference with water. Add the liquid to the pot.

Mix in the cooked rice, stirring to coat evenly and break up any lumps. Add the green onions and parsley. Season with salt and cayenne. Allow the mixture to cool. Stuff the whole chicken with the rice. Place the chicken on a roasting pan and roast for about 45 minutes or until the juices run clear. Spoon the pureed Alligator Sauce Piquant in the center of plate. Arrange the carved chicken and dressing in the center of the sauce. Garnish with long chives and chopped hives.

This recipe yields 6 servings.

3 1/2 pounds Whole chicken Onion chunks Unpeeled apple wedges

1 Chunks celery

Fill the cavity with apple, onions and celery. Place it in a Pam-sprayed Dutch oven or a roasting pan deep enough that it can later be sealed in foil without the foil touching the skin of the chicken. Follow the recipe as given in Rotisserie Chicken (Boston Chicken & KFC) for chicken breasts.

But use 350 oven for an hour plus 15 to 30 minutes depending on the size of the chicken. Be sure it is nicely browned Or use Reynold's Oven Bags per directions that accompany the bags.

Atlanta BBQ Sauce Recipe - Recipes From The Best BBQ Caterers In Atlanta

Atlanta GA offers some of the best BBQ and has some of the best BBQ restaurants in the country. Atlanta BBQ sauces differ from some of its neighboring states. Most BBQ sauces have a few things in common. The main ingredients are tomatoes or ketchup, spices, something sweet like sugar or molasses and sometimes vinegar. Most of the BBQ sauces that I have tried in the Atlanta area has a strong tomato base. I think most of the BBQ restaurants use either tomato ketchup or sauce.

One of my favorite Atlanta BBQ sauce recipes is as follows:

Two table spoons of butter

One half of an onion chopped fine

One and one half cups of tomato sauce

One cup of cider vinegar

One teaspoon of liquid smoke (You can find this in most grocery stores)

One quarter cup of brown sugar

One teaspoon of salt

One teaspoon of fine black pepper

Cayenne pepper to taste (Maybe about 1 teaspoon)

One table spoon of yellow mustard

You will need to melt the butter in a sauce pan and then brown the onions until soft. Add the other ingredients and simmer for twenty minutes.

If you want a hotter sauce then just add more cayenne pepper but be careful. Keep in mind that the sauce will seem spicy when it is warm. Once the sauce cools it will not taste as spicy. The liquid smoke adds a unique twist but be careful because using too much will ruin the batch of sauce.

I love BBQ and this sauce is one of my favorites. Give it a try at your next barbeque.

This book has been wonderful for my family. The information on nutrition and her methods are invaluable. We now buy the organic versions of "the dirty dozen" and don't cook our meats on the grill unless we marinate first. Most of the recipes are very tasty and leave us feeling great! My husband mentioned how he can't handle much of the greasy foods he used to eat on his lunchbreaks since I've been cooking with this book. He hates vegetables, so adding them to our food has been a great way to help him eat healthier without forcing the issue. He knows I do it but doesn't ask too many questions--he just enjoys the finished product. We eat meals using this book almost every day and there really hasn't been a significant increase in our grocery bill at all. This book has also inspired me to "sneak around" with other recipes and try to make them healthier as well! Even if you have a family full of veggie eaters, this cookbook will shed new light on cooking and eating healthy. The only reason I gave it four stars instead of five was because of the subtitle: "How to cheat on your man in the kitchen." I understand it's kind of tounge-in-cheek, but I think it could have been worded differently. That aside, the book is set up nicely, with easy to follow instructions and an index that makes it easy to find anything in the book. I make all the purees on one day and then freeze them in ice cube trays. I even do this with the smoothie recipies! It takes a few recipes to get the hang of being a sneaky chef, but it's fun and inspiring. I'm going to get her other cookbooks as well!
